Cheesy Chicken and Rice Bake

If you’re like me, you struggle with coming up with healthy, quick supper ideas that fit into your schedule and cooking ability.  I really like to cook but I have to admit, I’m not the most adventurous.  I mean, I have to make things that the picky people in my family will eat.

A real bonus is if I can get things ready the night or day before.  The crock pot is a real pal to me!  But this recipe didn’t require the crock pot and my kids just had to stick the pan in the oven and voila! the dinner was ready by the time I got home!

I cooked the chicken and the rice the night before.  I was making another chicken recipe and just put two additional breasts on the pan,just lightly seasoned with garlic powder and some pepper.  The rice I made separately.  Then, put all of the ingredients together in a bowl, throw them in a baking dish and then into the fridge.  Seriously, it doesn’t get too much easier than this.  And, MMMM, it was good.  I really like how you can customize it with the salsa, either mild to hot to suit your tastes.  The original recipe also calls for a can of green chilis, which I didn’t have, so I omitted.    It seemed to turn out great anyway.

Cheesy Chicken and Rice Bake

serves 4-6

  • 2 boneless, skinless chicken breasts, grilled and shredded, or chopped into small pieces
  • 4 cups cooked brown rice
  • 3/4 cup frozen corn
  • 1 15 ounce can black beans, drained and rinsed
  • 1 cup plain greek yogurt (you can use sour cream)
  • 1 – 1 ½ cups of chunky salsa (whatever heat you desire!)
  • 1 cup grated cheddar & monterey jack cheese (low-fat cheese works too!) + more for topping if desired
  • cilantro for garnish (optional)

Preheat oven to 350. In a large bowl, combine all ingredients except for cilantro and mix thoroughly to combine. Make sure the yogurt and cheese is stirred in throughout the entire bowl. Season with salt and pepper if desired. Transfer to an oven-safe dish and top with extra cheese if you would like. Bake for 20-25 minutes, or until heated through. Garnish with chopped cilantro, if desired.
